tangy spinach + tofu ramen 🍜 // pour in tiny layer of hot water into a small saucepan. mix in miso paste until dissolved. add in 1.5-2 cups of boiling water. drizzle in some soy sauce, a squeeze of sriracha, a plop of rice wine vinegar, half a tbsp of vegan oyster sauce, a shake of garlic powder, and a GENEROUS amount of a song of spice and fire spice blend (shichimi togarashi). drop in some cubed tofu and let this all boil together for a couple minutes to allow the flavors to combine. put in your ramen noodles and cook according to package directions. stir frequently to ensure noodles cook evenly. in the last minute of cooking, drop in a large handful of spinach and stir to wilt. once the noodles are done, pour into a bowl, top with more shichimi togarashi, and enjoy!
